According to some quick googling, a yacht of the size as that of Ryan costs about 10 - 20 million dollars. If he was able to afford this, 2 million dollars would not have been that much money for him. So why did he take such a risk for such a comparably small sum? Or was he at this stage already hopelessly confused by the death of his wife and the loss of his job?

If I remember correctly, it was a stolen yacht wasn't it?

In the beginning of the game there was a letter from the owner of the yacht hiring Rosa to investigate it cruising on its own at night and ending up afloat River Hudson the next morning or something?

No, in the report about the theft it is unambiguously stated that it is his "personal yacht".

Ryan most definitely snapped. As for how he afforded the yacht, he probably was paying it in (very large!) installments, or he bought it many years ago when he had more money to spend.
